Laundry Stain Removal Saturday: Grilled Oriental Pork Tenderloin

Grilling is one of my favorite cooking methods because I don't end up with a bunch of pots and pans to wash! You'll love this recipe from About.com Grilling even more because you don't even to clean the grill. It's cooked in a foil packet! But if you do happen to drop a bit down your shirt, you can clean away the laundry stains by following the links!

Grilled Oriental Pork Tenderloin

1 pound pork tenderloin

2 cups broccoli, chopped

2 cups carrots, thinly sliced

1 red bell pepper, cleaned and cut into thin strips

1 8 ounce can of sliced water chestnuts, drained

2 green onions, sliced

2 cloves garlic minced

4 tablespoons soy sauce

3 teaspoons sesame oil

1 teaspoon fresh ginger

Remove most of the stems from the broccoli leaving mostly the flowering part. Preheat grill. Divide all ingredients by 4. Cut four large pieces of aluminum foil. Place tenderloin on hot grill and sear the outside making good grill marks. Grill about 10 minutes. Slice tenderloin into 1/4 inch slices and divide into 4 equal amounts. Place one-fourth of the pork, broccoli, water chestnuts, red pepper and onions in the center of one piece of foil. Season with soy sauce, sesame oil and ginger. Fold and seal foil. Repeat until all four packets are made. Place on hot grill for 10-12 minutes. Serve over rice.

I have a confession. I love gardening more than laundry. Yes, it's true. But as I was in the garden watching a cardinal pecking at my newly ripening strawberries, I thought of a way to keep him away but still allow the sun and rain to reach the berries. I used a mesh pop-up clothes hamper as a berry bird shield!

Laundry Stain Removal Saturday: Glazed Carrots with Onions

One of my friends has started a farming cooperative and he is growing the most wonderful variety of carrots. They are so wonderful raw that it is hard to save enough for cooking. But, if you do want a special vegetable dish, you'll enjoy these Glazed Carrots with Onions from About.com Southern Food. If you happen to drop a bit on your shirt, just follow the links to remove the stains.

Glazed Carrots with Onions

2 tablespoons butter

8 carrots, cut in 1/4-inch slices on the diagonal

2 medium onions, quartered and sliced about 1/4-inch thick

1/4 teaspoon ground ginger

1/4 cup orange juice

1/4 cup currant jelly

1/4 teaspoon salt

fresh chopped parsley for garnish

In a medium skillet, melt butter over medium-low heat. Add carrots, onions, and ginger. Cover and cook, stirring, for about 7 to 10 minutes, until just tender. Stir in the orange juice, jelly, and salt. Cook, uncovered, for about 4 minutes, stirring frequently, until vegetables are tender and nicely glazed with the jelly and orange juice mixture. Sprinkle with fresh chopped parsley just before serving. Serves 4.
